Leslie’s Vegetable Biryani
Heat 1 T butter or vegetable oil in large saucepan
add
1 onion chopped
2 cloves garlic chopped
1/2 stick cinnamon
1/2 t coriander
2 whole cloves
cayenne to taste
4 green cardamon pods
generous grind of black pepper
.5-1 tsp salt
add
1/2 c chopped tomato or cherry tomatoes
saute until onion is brown and tomatoes are falling apart
add
1 cup chopped raw green beans
1 chopped zucchini or eggplant
1 cup chopped raw cabbage
1 large carrot diced roughly
continue to cook for another 5-10 minutes
(optional add 1/2-1 c frozen peas or lima beans)
add 2 cups white or brown rice – basmati is best, jasmine or reg long grain will work
add 2 cups water
bring to boil cover, turn down and simmer for 15-20 minutes on low heat turn off heat and leave covered for at least 10 more minutes serve with raita – cucumber & non-fat yogurt optional, grilled chicken, other veggies, chutney
